The perfect beer and cheese pairing
AU GRÉ DES CHAMPS AND BORÉALE ROUSSE
As an appetizer, as an hors-d’oeuvre or just to as something to snack on a sunny day, there’s no better pairing than a tasty Quebecois raw milk cheese, accompanied by a cold Boréale Rousse. But what cheese best compliments this complex beer? Marie-Pier Gosselin, the soon-to-be successor of the Belles Prairies farm and the Au Gré des Champs cheese shop, offers us an pairing between their most popular cheese, which bears the same name as their shop, and our Boréale Rousse. A perfect blend between two products of character for the summer season that is finally upon us.
According to Marie-Pier, the strong caramel notes of the Boréale Rousse blend perfectly with the buttery, hazelnut and caramelized flavours of the Gré des Champs cheese. The balance between the bitterness and sweetness of the ale compliments the flavours of this wonderful hard cheese.
This matured cheese is available at the Au Gré des Champs shop in Saint-Jean-sur-Richelieu or in most specialty grocery stores across Quebec. Visit their website for more information: augredeschamps.com.
